Desi Macaroni




The Equation: Macaroni + Cheese + Indian/Asian flavor

The Answer: DAMN GOOD STUFF

Comment: Don't be afraid of the ketchup.


Desi Macaroni
Serves 3-4

1 cup dry macaroni
1 T garlic, minced
½ cup bell pepper, finely diced
½ cup onion, finely diced
2 T cilantro, finely chopped
½ white vinegar
1 T soy sauce
1 T ketchup
1 T tomato paste
½ tsp. chili flakes
½ cup mozzarella or grated parmesan
1 T olive oil
Salt and Pepper

Cook macaroni according to package directions. In a skillet, heat olive oil. Add garlic, onions and bell pepper. Saute for a few minutes – at least until onions soften. Add cilantro, vinegar, soy sauce, ketchup, and tomato paste. Mix well. Then add cooked macaroni to the skilled. Mixing thoroughly so that all macaroni gets a bit of “sauce”. Transfer macaroni to oven safe dish, then spring cheese on top. Bake in preheated 350 degree oven for 10 minutes, until cheese melts.

Looks very tasty. I end up deifying my pasta as well, as my son loves food that have some spices. I usually add pav bhaji masala to the pasta. try it , it tastes great. BTW, my son is 3 yrs old :).
